Sieg said she always wanted to open a restaurant and starting a food truck seemed like a "perfect idea" due to low overhead and the ability to travel where the demand is.
For Brooke Sieg, eating healthy is more than just a fad, it is a way of life.
And, it is one that she looks forward to bringing to Putnam County residents later this month, as she is on her way of opening Nature's Plate Vegan Food Truck.
"My partner and I went plant based in 2019 and quickly realized how few options for eating out there was across the board, but specifically in our small town," Sieg told The Putnam County Post.
Sieg said she always wanted to open a restaurant and starting a food truck seemed like a "perfect idea" due to low overhead and the ability to travel where the demand is.
"I am extremely excited to start serving Putnam County and surrounding areas with plant-based meals. We are parenting with local farms to provide a true farm to fork experience, while building the community as a whole," Sieg said.
Sieg said the truck will offer classic comfort foods that are reimagined with began ingredients, along with new options she believes that will become favorites.
"The response from the community has been amazing and far surpassed what I expected. I ran a Kickstarterto gain funds and there are so many more plant based folks in this county than I would have ever imagined. Even people who don't eat a plant based diet have been very excited for another food option in a town where there are so few. Folks have expressed excitement for supporting their local farmers with a healthier, local option," Sieg said.
The hope is to have a grand opening at the end of November, Sieg said.
"After that, we will be at several winter markets in different towns, street selling in Greencastle and in Terre Haute at a food truck park," Sieg said.
